Raw Food Recipe: Berry Crazy Crepes

Treat Mom to a sweet and decadent raw breakfast in bed this Mother’s Day! These crepes are easy for Dad, fun for the kids, and a delicious healthy breakfast for the whole family! You can make them the night before and just warm and serve in the morning!
Raw Food Recipe: Berry Crazy Crepes
Ingredients
For The Crepes:
- 2 cups coconut meat
- 2 ripe whole bananas
- 1/2 tsp apple pie spice
- 1/4 tsp Himalayan pink salt
- 1/2 tsp pure vanilla extract
- 1 tsp lemon juice
- ½ cup water (or as needed)
- 2 1/2 tsp coconut nectar or other raw sweetener
- 1/4 cup *golden flax meal (*this gives the look of “cooked”)
For The Filling:
- 2 cups mixed berries
- 1 large avocado
- 1 tsp balsamic vinegar
- 1 tsp pure vanilla extract
- 1/2 cup + 2 tsp coconut nectar
- 1/2 tsp Himalayan pink salt
Garnish:
- 1/2 cups organic berry mix, frozen blend
Directions
For The Crepes:
Step 1: Put all ingredients, except the flax meal, in a food processor. Process until the mixture is smooth.
Step 2: Add flax meal and pulse until mixture is just blended.
Step 3: On a dehydrator tray outfitted with a teflex sheet, place 1/4 cup of the crepe batter in a corner of the tray.
Step 4: Using an offset spatula, spread EVENLY and thinly to 7-8 inches in diameter. Repeat with all the batter.
Step 5: Place crepes in dehydrator for about 6 hours, or until dry to the touch.
Step 6: Flip over crepes, remove from teflon sheet and place onto a mesh dehydrator tray and continue drying in the dehydrator for about another hour.
Step 7: Allow to cool.
Step 8: Store extras in an airtight container in the refrigerator for up to a week.
For The Filling:
Step 1: Place all ingredients in high powered blender, in the order listed.
Step 2: Blend until smooth and creamy.
Putting It All Together
Step 1: To warm the crepes, place them in the dehydrator for about 20 minutes.
Step 2: Place warm crepe on a plate. Scoop 1/4 cup of berry filling into the center of crepe.
Step 3: Roll up the crepe and place on the plate with the seam side down.
Step 4: Garnish with berries and drizzle a bit of the berries’ liquid on top.
Step 5: Place on a serving tray along with a Mother’s Day carnation and serve to Mom in bed!
