Chocolate “Ice Cream”

Servings: 1
Ingredients:
• handful of frozen banana slices
• carob or raw cacao powder
• almond Milk
• dash of vanilla
Directions:
1. Blend first 3 ingredients in blender.
2. Add vanilla to taste.
3. Enjoy!
Instant Pink Diva Cake

If you are looking for a special birthday cake recipe that fits with the Body Enlightenment philosophy, I whipped this up in only 5 (I’m not kidding) 5 minutes! My wife, Keely, says it doesn’t taste like chocolate cake, but it’s good! Don’t be afraid to use your imagination.
Ingredients for the cake:
• nice, thick piece of pie shaped watermelon
Ingredients for the icing:
• Bananas blended with enough strawberries to make it the pink color you want.
Directions:
1. Pour the blended icing over the top of the cake with style.
2. Add a couple of sliced strawberries and a birthday candle for the finishing touch!
Cherry or Berry Cheesecake Recipe
Servings: 6-8
Crust Ingredients:
• 2 cups raw almonds
• 1⁄2 cup pitted dates
• 1⁄8 cup grated coconut, unsulphured and unsweetened
• 1⁄2 teaspoon sea salt
Crust Directions:
1. Combine all ingredients in bowl of food processor using the S blade.
2. Press into pie plate.
Filling Ingredients:
• 4 cups raw cashews, soaked in water to cover – 2 hours and drained
• 1⁄8 cup fresh lemon juice
• 2 bananas
• 1 teaspoon ground flax seeds
• 2 dates soaked several hours and mashed
• 1 teaspoon vanilla
Filling Directions:
1. Place all ingredients in food processor using the S blade until smooth and thick.
2. Pour into crust.
Sauce Ingredients:
- 2 cups fresh pitted cherries OR strawberries OR blueberries OR raspberries OR blackberries
- 1⁄2 cup pitted dates
Sauce Directions:
1. Blend ingredients in food processor using the S blade.
2. Pour over pie.
3. Top with slice of whatever berry you used and sprinkle with coconut.
4. Set in freezer for an hour or more.
5. Serve frozen.
2nd Option
Cream Sauce Ingredients:
• 1⁄2 cup cashews, soaked for 2 hours
• coconut meat from 1 young coconut, fresh not dried
• 4-6 dates soaked several hours and mashed
• 2 tablespoons coconut oil/butter
• 1⁄4 cup coconut milk
• 2 teaspoons vanilla
• 1⁄4 teaspoon cinnamon
• 1⁄4 teaspoon sea salt
Cream Sauce Directions:
1. Place all ingredients in a high powdered blender and process until creamy. 2. Refrigerate until ready to pour over the cake.
