Raw Food Recipe: Mince Pies for The Holidays!

Hard to believe the holidays are almost here again. Temptation will once more abound. You don’t have to throw away all your healthy efforts to enjoy this lovely season though. We’ll be sharing some wonderful treats and holiday recipes over the next few weeks that will satisfy your cravings without compromising your goals. And trust me, you’ll want to share them.
You can give these pies to your loved ones and they’ll never suspect they’re raw unless you decide to tell them!
These pies are causing quite a stir in households and offices across the land. 🙂
Raw Food Recipe for Mince Pies by Russell James
Yields 10 – 12 pies
Raw Mince Pie Crust
Ingredients:
- 2 cups cashews
- 1 cup oat flour*
- 1/4 cup agave
or maple syrup - 2 tablespoon water
- 3 tablespoons lemon juice
- pinch salt
*Raw oat flour is made by milling raw oats in a coffee grinder or high-speed blender. If you don’t have raw oats available and you don’t mind using oats that have been steamed to preserve shelf life, then non-raw oats will also work.
Directions:
- Grind all ingredients in a food processor until thoroughly mixed.
- Press the mixture into a tart/muffin tray that has been lined with plastic wrap, and dehydrate at 105 degrees F for 2-3 hours.
- Remove the crusts from the tray cases and dehydrate out of the case for a further 8+ hours, on the mesh dehydrator sheet.
Raw Mince Pie Filling
Ingredients:
- 1 1/2 cups soft dates, pitted
- 1/2 cup orange juice
- 2 apples, finely chopped
- 1 1/2 teaspoons mixed spice
or pumpkin pie spice
- 1 cup raisins, roughly chopped
- pinch salt
Directions:
- Grind all ingredients except the apple and raisins until they form a paste.
- Add in the apple and raisins and process for a further 5 – 10 seconds until fully combined.
- Fill each of the crusts with a little of the mixture then top with the cashew icing.
Creamy Raw Cashew Icing
Ingredients:
- 1 1/2 cups cashews
- 1 tablespoon lemon juice
- pinch salt
- 3 tablespoons coconut oil
- 1/4 cup agave
- 1/2 cup water
Directions:
- Blend all ingredients in a high-speed blender until completely smooth.
- Top each mince pie with cashew icing.
- Garnish with a sprinkle of nutmeg, serve, and enjoy!
