You might be surprised to discover that cabbage is richer in Vitamin C than oranges – giving it immune boosting power and cold fighting properties. Cabbage is also high in fiber and low in calories, making it a great addition to any meal. With all this goodness, who wouldn’t be crazy about cabbage?
Sugar & Spice Cole Slaw
Salad Ingredients:
- 1 large head of green cabbage
- 5 carrots
- 5 stalks of celery
- 1 medium red onion
- 1⁄2 cup raisins
- 1 pear
- 1 cup walnuts
- 2 tablespoons celery seed
- 1 tablespoon cardamom
Dressing Ingredients:
- 1 large head of green cabbage
- 5 carrots
- 5 stalks of celery
- 1 medium red onion
- 1⁄2 cup raisins
Directions:
- Place all salad ingredients, except for the avocado, into a large food processor and pulse-chop until everything is cut up to desired size.
- Pour out into serving bowl.
- Blend dressing ingredients in a blender.
- Add to slaw and mix.
Serves 4.
