Raw Recipe: Luscious Love Cookies

Get some summer lovin’ with these deliciously rich fudge-like vegan treats. Not only are they easy to make, they are also are super rich in flavor and full of body loving ingredients including cocoa, which is packed with antioxidants, phytochemicals and minerals.
The perfect summertime cookie, they are best served cold (it’s a moist cookie) with a hearty serving of fresh raspberries.

Luscious Love Cookies

 

Ingredients:

  • 1 cup pecan nut-halves
  • ½ cup cashew nuts
  • 5 t raw cacao (chocolate) powder
  • 1/2 cup sultanas
  • 1 t agave nectar
  • dash vanilla extract
  • teensy pinch Himalayan crystal salt (or any sea salt you have on hand)
  • 1/2 cup raspberries (can be frozen raspberries that you’ve thawed)
  • fresh raspberries for garnish (optional)

Roughly chop the pecans and cashews and place in a food processor. Process the nuts until they resemble breadcrumbs.

Add the cacao powder, sultanas, agave nectar, vanilla extract and salt. Process until well combined.

Add the raspberries, and process the mixture until it becomes a forms a type of dough.

On a sheet of baking paper, spread out the dough to a thickness of about 1cm. Use a blunt knife to help smooth the surface. If the mixture it too sticky, put it in the freezer for about 10 mins.

Using a heart-shaped cookie cutter, cut into the dough. You might need to cut around the outside edges of the cutter. Again, if the mixture seems too sticky, put it in the fridge for an hour or so- or the freezer for 10-15 mins.

Carefully push out each cookie onto a plate, and chill in the fridge for at least an hour, until the cookies are firm. Top each cookie with a raspberry, then share, and enjoy!

llcookies225x169I wanted to give some overall comments on this recipe.   I felt that this was more of a fudge or even a rich filling of some kind rather than a cookie. There is no way that you can pick it up and bite into it unless it is frozen- it’s much too sticky and pasty.  Also, I made some minor additions to the actual recipe directions above, they are in italics. All in all, I thought it tasted really great! It was fantastic completely covered with fresh raspberries. And like I said above, it was easy to make. I had no issues other than the stickiness of the dough. I found it easier and quicker to freeze it for a short while rather than wait for it to get cold in the refrigerator.
