Lately, my daughter, who is usually quite flexible and easy going with food, has been a bit picky.

Okay, so I admit it: I get on a roll with certain foods and I’m one of those folks who could drink the same green smoothie every morning and eat the same salad every day, without tiring of it. My daughter is not like that. Her absolute favorite food will remain on a pedestal for about 1-2 weeks and then she no longer cares for it until she has not met it or tasted it for about 2-3 months.

So, this week, I’ve been on a search for some kid-friendly raw recipes that will tempt her tastebuds and also pacify my need to make sure she’s getting lots of nutrients.

So I thought, “What child doesn’t love noodles???” I found three great variations of kelp noodle salad recipes, each with just one bag of kelp noodles. How much easier does it get than that?

So, over the next couple weeks I’m going to be sharing these three yummy recipes I’ve found that have received a big thumbs up in our house! 🙂

Each of these recipes have two components – the salad and the dressing!

Please Note: If you or your kids don’t like the texture of kelp noodles, try using freshly spiralized zucchini noodles instead!

Asian Ginger Kelp Noodle Salad

Asian Ginger Dressing:

  • 1 Tablespoon miso paste
  • 2 teaspoons whole grain mustard
  • 2 teaspoons freshly grated ginger
  • 1 heaping Tablespoon tamari
  • ¼ cup brown rice vinegar
  • ½ cup sesame oil

Blend all dressing ingredients together until creamy smooth.

Asian Ginger Kelp Noodle Salad:

  • 1 head baby bok choy
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • ½ cup radicchio
  • 2 tablespoons red onion,
    julienned
  • 2 tablespoons green onion,
    chopped
  • ¼ cup freshly chopped cilantro (optional)
  • 1 teaspoon black sesame seeds (optional)

Except for the optional cilantro, pour dressing over the salad ingredients. Toss and mix well. Garnish with chopped cilantro, if so desired.
