3 Perfect Raw Summer Soups

Smoothies, juices and salads are wonderful for long hot summer days but how about refreshing raw soup? So tasty and easy to make, these soups are a perfect addition to your summer menu.
Watermelon Gazpacho

Servings: 4
Ingredients:
• 6 cups diced watermelon, seeded
• 1⁄2 cup onion, finely diced
• 1⁄2 cup parsley, finely diced
• 1⁄2 small yellow bell pepper, finely diced
• 1 small jalapeno pepper, finely diced
• 2 cloves garlic, minced
• 1⁄2 cucumber, finely diced
Directions:
1. Mix all ingredients in a large bowl.
2. In a blender, puree half of mixture until smooth.
3. Add puree mixture back to large bowl.
4. Chill for an hour.
Minty Cucumber Soup
Servings: 30+
Ingredients:
• 7 large cucumber, peeled and seeded
• 4 limes
• 2 avocados
• 1 pound of mint
Directions:
1. Blend all ingredients together.
2. Serve in chilled bowls.
Sunflower Soup

Ingredients:
• 2 tomatoes
• 4-5 slices of sundried tomatoes
• 4 inches of cucumber
• oodles and oodles of crunchy, fresh, dark green baby sunflower sprouts!
Directions:
1. Whip it up in the blender.
2. Gobble it down.
